INGREDIENTS


HUMMUS INGREDIENTS

  • 3/4 cup roasted red bell peppers

  • 3 1/2 cups soaked and cooked chickpeas/garbanzo beans (1 1/2 cups dry)

  • 1/4 cup tahini paste

  • 2 tbsp  extra virgin olive oil

  • 1 1/2 tbsp fresh lemon juice

  • 1 1/2 tsp crushed fresh garlic (or more to taste)

  • 3/4 tsp smoked paprika

  • 1/4 tsp salt (or more to taste - usually 1/2 tsp)

  • 1/4 tsp ceyenne pepper

  • Warm water as needed


HUMMUS-CRUSTED CHICKEN INGREDIENTS

  • 4 boneless, skinless chicken breasts

  • salt and pepper

  • 1 cup hummus

  • 1 tbsp. EVOO

  • 2 lemons

  • 1 tsp. smoked paprika

HUMMUS INSTRUCTIONS

  1. You can use jarred roasted red peppers (drained) or make your own. For instructions for homemade roasted red peppers click here

  2. If using canned chickpeas, drain them and rinse them after soaking, then simmer them in lightly salted water on the stovetop for 1 - 1.5 hours until soft and tender. Drain the beans and allow to cool to room temperature.

  3.  To make the hummus ultra creamy, you can peel the cooked chickpeas. Squeeze each chickpea gently to remove the skin, then discard the skins before processing. Instructional video on peeling chickpeas.

  4. Using the blade attachment on your food processor combine roasted peppers, chickpeas, tahini paste, olive oil, lemon juice, garlic, and spices.

  5. Pulse for about 1 min. Then process until smooth. If the mixture seems too thick, add warm water a tbsp at a time. Blend until desired consistency is reached. Taste and add more salt, lemon juice, ceyenne, or garlic as needed. Process if any ingredients is added.

  6. Pour into a serving bowl and chill thoroughly before stirring. Hummus will firm up slightly as it chills and will spread easier on the chicken.


HUMMUS-CRUSTED CHICKEN INSTRUCTIONS

  1. Preheat oven to 450 degrees. 

  2. Pat dry the chicken and season with salt and pepper.

  3. Lay chicken breast on the baking dish and evenly cover all 4 breast with hummus until entire breast is covered.

  4. Squeeze juice of 1 lemon over the chicken.

  5. Sprinkle paprika over the breasts.

  6. Thinly slice the remaining lemon and place the slices overtop the chicken.

  7. Bake for 15-20 mins or until the chicken is cooked through. Looking for an internal temp of 165 degrees. Serve immediately.
